Sanbe Soba emits a mellow aroma as you chew it. The volcanic ash soil and dramatic temperature variation of the climate nurture a rich flavor. This is a local variety handed down from the Edo period that has been protected by the local people, and in 2020 it was registered as a geographical indication (GI) for the protection of local products. Its reputation is growing around Japan.
